Classic Shrimp Cocktail

Classic Shrimp Cocktail

-1 pound largest peel-on shrimp available

-1 lemon, for the water

-heavy pinch salt for the water

For serving:

-olive oil, for drizzling

-lemon juice and zest

-lemon segments

-cocktail sauce, recipe below

Heat a large pot of water to a boil. Add the lemon juice and a couple heavy pinches of salt. Poach the shrimp until just cooked through. Remove to a baking sheet and allow to cool to room temperature. Peel the shrimp and drizzle with olive oil and lemon juice and season with a little lemon zest, if desired. Serve with the cocktail sauce and lemon wedges.

For the Cocktail Sauce:

-1 cup ketchup

-2 teaspoons adobo from canned chipotles

-2 teaspoons freshly grated horseradish

-juice from 1 lemon, freshly squeezed

-kosher salt, to taste

Stir together all ingredients, mix well.
