Bugs discovered inside the pasta and inside the oven! Restaurant ordered shut

Would that pasta have been served up to YOU?

The Florida Department of Business and Professional Regulation ordered Patrizia’s in Deerfield Beach, Hoagie Bear Subs in Naranja, and Soriano Brothers Cuban Cuisine & Marketplace in Palmetto Bay to shut down last week after inspectors uncovered widespread sanitation problems.

Records show roach and insect activity inside bags of food, unsanitary kitchen conditions, and food safety violations serious enough to trigger immediate closures.

Below is a list of places and some of their violations.

No commercial kitchens were ordered shut in Broward and or the Florida Keys last week.

All of the restaurants were later allowed to reopen after completing a required cleanup and passing a follow-up inspection.

“Presence of insects, rodents, or other pests. 1. Approximately 15 live insects observed inside bag of dry macaroni in dry storage. See Stop Sale. 2. Approximately 5 live insects crawling on shelf in dry storage area."

“Stop Sale issued due to food not being in a wholesome, sound condition. 1. No tag on oysters stored in four door reach in cooler in prep area. 2. Approximately 15 live insects observed inside bag of dry macaroni in dry storage. Repeat Violation.”

“Roach activity present as evidenced by live roaches found. 1. Observed four live roaches on floor at cookline in kitchen.”

“Dead roaches on premises. 1. Approximately 20 dead roaches observed inside oven at cookline in kitchen. 2. Approximately 10 dead roaches on floor at cookline in kitchen. 3. Dead roaches observed inside clear light shield on ceiling in prep area."

“Accumulation of lime scale on the inside of the dish machine in kitchen.”

“Floor soiled/has accumulation of debris. 1. Observed under cookline equipment in kitchen.”

“Wall soiled with accumulated grease, food debris, and/or dust. 1. Wall soiled behind oven in kitchen.”

“Ceiling tiles and vents soiled with accumulated food debris, grease, dust, or mold-like substance in kitchen.”

“Interior of reach in freezer door in disrepair/has exposed insulation in storage area.”

“Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. 1. Observed old food debris on bottom shelves under cookline equipment in kitchen. 2. Hood filters at grill in kitchen. Repeat Violation.”

“Standing water in bottom of two door advance reach in cooler at cookline in kitchen. Repeat Violation.”

“Employee with no hair restraint while engaging in food preparation. Observed at least four employees working at cookline in kitchen with no hair restraints.”

“Employee eating in a food preparation or other restricted area. Observed employee drinking from mug at cookline in kitchen.”

“Live, small flying insects found. Observed approximately 30 small flying insects by mop sink and by the water heater at preparation area. Also observed approximately 17 small flying insects on rack with clean containers above 3 compartment sink. Also observed approximately 6 small flying insects above food containers next to flat grill. Operator closed lid during inspection. Also observed approximately 20 dead small insects inside standing reach in cooler at preparation area.”

“Fly sticky tape hanging over food/food preparation area/food-contact equipment. Observed 2 fly sticky tape full of insects at preparation area. Operator removed and discarded during inspection.”

“Food-contact surface soiled with food debris, mold-like substance or slime. Observed soiled slicer blades.”

“Interior of oven/microwave has accumulation of black substance/grease/food debris.”

“Food preparation sink has soil/old food residue.”

“Reach-in cooler interior/shelves have accumulation of soil residues. Observed in reach in cooler next to flat grill, also in standing unit at preparation area. Repeat Violation.”

“Shell eggs in use or stored with cracks or broken shells. See stop sale. Observed 2 broken shells eggs stored on the same container at reach in cooler next to flat grill.”

“Employee failed to wash hands before putting on gloves to initiate a task working with food. Coached operator on proper procedures.”

“Live, small flying insects found Observed approximately 35 flying insects flying all around front counter area and landing on preparation table at front counter. Also observed approximately 5 + flying insects flying and landing on top of preparation table and cleaned equipment’s at kitchen area.”

“Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener blade soiled on preparation table at kitchen area. Repeat Violation.”

“Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Mozzarella Cheese (48F - Cold Holding); Pork (59F - Cold Holding) inside reach in cooler at kitchen area. As per operator for less than 4 hours. Repeat Violation.”

“Buildup of food debris/soil residue on equipment door handles. Observed hot holding unit handle soiled next to corn tamales machine.”

“Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed gaskets soiled inside reach in cooler next to cook line area. Repeat Violation.”

“Equipment and utensils not properly air-dried - wet nesting. Observed wet nesting inside clean utensils on shelf at kitchen area. Repeat Violation.”

“Floor area(s) covered with standing water. Observed standing water on the floor at dishwashing area. Repeat Violation.”

“Employee touched bare body part and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed 1employee engaged in food preparation touching hair and not washing hands.”

“Employee with no beard guard/restraint while engaging in food preparation. Observed 1 employee engaged in food preparation with not beard guard. Employee put beard guard during inspection.”
