Dirty Dining: Rodent collapses and dies in front of inspector!

Florida Department of Business and Professional Regulation inspectors ordered multiple restaurants shut down last week after uncovering disturbing conditions, including a live rodent that collapsed and died during an inspection, extensive rodent droppings in food prep areas, and kitchens overrun with live and dead roaches.

Inspectors also documented pests inside coolers, on clean dishes, and directly on food-contact surfaces, along with food held at unsafe temperatures and stop-sale orders issued for contaminated items.

Below is a list of places that were inspected and some of their violations.

All locations were allowed to re-open only after completing an ordered cleanup and passing a required re-inspection.

“Records/documents for required employee training do not contain all of the required information. No names, no issue date for all certificates. Six employees working with food at the time of inspection.”

“Ceiling/ceiling tile shows damage or is in disrepair. -4 missing tiles above preparation area in rear kitchen. -one tile with water damage above flip top in rear kitchen.”

“Dish machine chlorine sanitizer not at proper minimum strength. Discontinue use of dish machine for sanitizing and set up manual sanitization until dish machine is repaired and sanitizing properly. Dishwasher (Chlorine 10ppm), after 3rd. Attempt.”

“Employee touched soiled surface and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Manager picked up dead rodent, went outside to disposed, came back to dishwasher area and failed to wash hands. After instructed, manager washed hands.”

Observed one dead roach behind the hot holding cabinet located at the prep line by the front counter area. Observed 2 dead roaches around the floor drain located in the bar area.”

“Live, small flying insects found. Observed approximately 3 flying insects landing on food preparation table and cutting boards around the front counter food prep line. Observed approximately 4 flying insects in the air above food prep line in the kitchen area. Observed approximately 7 flying insects in the air by the floor drain located in the bar area.”

“Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed soiled interior of oven.”

“Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. 1. Observed Cooked potato (106F - Hot Holding) on grill at cook line. Cooked less than one hour ago per operator. Operator turned up heat and began reheating to 165F at the time of inspection.”

“Hand wash sink used for purposes other than handwashing. Observed wiping cloths properly solution and wiping cloth stored in basin of hand sink in kitchen. Repeat Violation.”

“ Employee failed to wash hands before putting on gloves to initiate a task working with food. Employees at kitchen changing tasks from soiled equipment to clean items, and manipulating food without properly hand washing.”
